How to make Upma

Ingredients

For 4 Servings:

1 cup of semolina (sooji or rava)

2 cups of water

1 cup of vegetables (such as carrots, peas, bell peppers)

1 onion, finely chopped

2 cloves of garlic, minced

1 teaspoon of mustard seeds

1 teaspoon of cumin seeds

2 dried red chilies

1 teaspoon of turmeric powder

Salt to taste

2 tablespoons of oil

Fresh cilantro and lemon juice for garnish

Recipe Directions

1. In a pan, heat 2 tablespoons of oil over medium heat. 

2. Add the mustard seeds, cumin seeds and dried red chilies and cook for 30 seconds or until the seeds start to splutter.

3. Add the chopped onions and sauté until translucent.

4. Add the minced garlic and sauté for 1-2 minutes.

5. Add the vegetables and sauté for 2-3 minutes or until they are tender.

6. Add the semolina and sauté for 2-3 minutes or until it becomes fragrant.

7. Slowly add 2 cups of water and bring the mixture to a boil.

8. Add the turmeric powder and salt to taste and stir.

9. Reduce the heat and cover the pan.

10. Cook for 5-7 minutes or until the semolina is cooked through and the water is absorbed.

11. Remove the pan from heat and let it sit for 2-3 minutes to allow the semolina to fluff up.

12. Garnish with fresh cilantro and a squeeze of lemon juice before serving.
